Pi Day Pie! Hoosier Mama Coconut Custard

Happy Pi day everyone! I know it's Pi day, and not actually pie day (January 23) BUTTTTTT any excuse to share pie is a good one. So I thought I'd share one of my favorite pies of all time, the Coconut Custard Pie from Hoosier Mama in Chicago. It's super delicious and creamy and perfect. Coconut haters to the left for this one.




Coconut Custard Pie

1 single crust blind-baked pie shell (9-in)

3/4 c sweetened coconut flakes
2 1/3 c heavy cream
2/3 c coconut milk
4 large eggs
3/4 c granulated sugar
1/2 tsp salt
1 tsp vanilla paste
toasted coconut flakes for topping

1.) Preheat oven to 400 degrees.

2.) Scatter the coconut flakes over the bottom of the empty pie shell

3.) Combine the heavy cream and coconut milk in a medium saucepan. Bring to a boil over medium heat, whisking occasionally.

4.) Meanwhile, whisk together the eggs, sugar, and salt in a medium bowl until well blended. Slowly pour in the hot coconut milk mixture a little bit at a time, whisking thoroughly after each addition. Add the vanilla paste and whisk to combine.

5.) Pour the pie filling through a fine mesh strainer into the shell.

6.) Bake for 20-25 minutes, until the edge of the filling closest to the crust is set and slightly puffy. the middle of the pie should still be quite loose. the custard filling should not appear set when it comes out of the oven. cool at room temp for 5 minutes and recheck. the pie should be completely set. if not, return to the oven for 5 to 10 more minutes. cool to room temp, then chill in the fridge for at least 3 hours before serving. Top with toasted coconut flakes before serving.

hola all, welcome to jams of the week. I'm still recovering from losing an hour of sleep yesterday (why do we have to do that days where I have to wake up at 4am? Blerg) so I've been trying to listen to songs that make me want to get out of bed and face the world. These four songs have been in my head the last week and they have been helping me feel more spring-y and less sleepy. Hopefully you like them too!

Doctor Who Awesome Art Round Up Vol. 2

SO I've made progress in my Who watching! I went back at started with season one (modern series) and I honestly liked it, but it was a little slow to me, I think it's the now outdated special effects. I like Christopher Eccleston as the doctor, especially after seeing Day of the Doctor. Did you know he's the baddie in Thor 2? I didn't. Either way, then it was on to David Tennant! Allons-y! I finished season 3 this week, and let me say Martha Jones is a badass, I liked her so much! I'm going to dive into Season 4 this week, so with that round 2 here we go!


Eleven in the Time of the Doctor was pretty heartbreaking. I love love this shot of him surrounded by children's drawings. I love the Doctors love for children and babies, especially when he translates =) The-Longfall-of-1979 has a lot of Doctor art on her DeviantArt so check her out!




ughh and then she has this one, from one of my favorite episodes with one of my favorite quotes.

I love how this one looks like Precious Moments or something they'd sell at Hallmark. I would totally buy a Doctor themed Precious Moments thing, even if it's super creepy.

So a lot of people had/have a hard time with the twelfth doctor, but he was my first doctor who I really watched so I like him a lot. His relationship with Clara is complex and deep. This photo is so beautiful I love it. Last Christmas is on my top 10 so far of favorite episodes.

Cosplay of the Day: Rey-Punzel

Oh man, today I saw this cosplay and it's my new favorite thing ever. I need to make myself one ASAP. How genius is this Rey-Punzel?!?!?!?! Star Wars plus Tangled!?!?! AMAZING!
