Summer 8/4/19 Canning

Hi! I'm posting this as a reminder to myself, but I hope if you want you can use them too!

Regular Peach Jam
4-1/2 cups prepared fruit (buy about 4 lb. fully ripe peaches)
 2 Tbsp. fresh lemon juice
 3 cups sugar, measured into separate bowl, divided
 1 box SURE-JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin
 1/2 tsp. butter or margarine (optional)

Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.

Peel and pit peaches. Finely chop or grind fruit. Measure exactly 4-1/2 cups prepared fruit into 6- or 8-quart saucepot. Stir in lemon juice.

Mix 1/4 cup of the sugar (from the measured amount in the bowl) and pectin in small bowl. Add to fruit in saucepot; mix well. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in remaining 2-3/4 cups sugar. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.

Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

Strawberry Jam
 6 cups prepared fruit (buy about 6 pt. fully ripe strawberries)
 4 cups sugar, measured into separate bowl, divided
 1 box SURE-JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin
 1/2 tsp. butter or margarine (optional)

Stem and crush strawberries thoroughly, one layer at a time. Measure exactly 6 cups prepared fruit into 6- or 8-quart saucepot.

Brown Sugar Peach jam with Bourbon and Vanilla

4 1/2 cups chopped peaches, fresh or frozen
1 cup unsweetened apple juice (I left out)
5 tablespoons Ball® RealFruit™ Low or No-Sugar Needed Pectin
1 ½ cups of brown sugar
3 tablespoons bottled lemon juice
ADDED: 1/4C Bourbon, 1t Vanilla bean paste
Yields 6 half-pint jars

Method:
Prepare hot water bath, jars, rings and lids.
Combine peaches with apple juice and lemon juice in a non-reactive pot. Gradually stir in Ball® RealFruit™ Pectin.  Bring mixture to a full rolling boil that cannot be stirred down, over high heat, stirring constantly.
Add brown sugar. Return mixture to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.
Test and check set.
Ladle hot jam into hot jars, one at a time, leaving 1/4-inch headspace. Wipe rims. Center lids on jars. Apply bands and adjust to fingertip tight.
Place filled jars in canner, ensuring jars are covered by 1 to 2 inches of water. Place lid on canner. Bring water to gentle, steady boil.
Process jars for 10 minutes, adjusting for altitude. Turn off heat, remove lid and let jars stand for 5 minutes.
